Orange blossom honey is a Cretan product that is collected during the summer (May and June). It contains orange blossom honey, as well as lemon blossom honey.

Crystallization is a natural phenomenon. Orange blossom honey crystallizes easily because it is rich in glucose. It takes about one to three months for the crystallization to take place.

So as to give honey its fluid form back, we put it in a bowl with warm water at around 40 degrees (bain-marie) so that the jar does not come into direct contact with high temperature and breaks into pieces. Using bain-marie at a higher temperature can have a negative effect on the nutrients and the vitamins that honey contains.
